Algae in food

Algae suitable for human consumption is an under-utilised resource in the North Atlantic and great potential is for development of new food products with marine algae. A student project at Matís (Icelandic Food and Biotech R&D Company) resulted in a new product which is on its way to the market. Jón Trausti Kárason research scientist at Matís lead a group of students who developed a new algae fortified product. The product is an Icelandic cultured dairy product called skyr that is flavoured with wild Icelandic blueberries, organic flower honey produced in Reykjavík and kelp from the Breiðafjörður Bay.
